Blue cheese. There are two types of Gorgonzola: picante and dolce. They differ in the method of production. Picante is made from unpasteurized milk using traditional technology. After ripening, small punctures are made in the heads of the cheese to form mold. The inside of picante has a grayish color; Italians call it silver. This traditional cheese has a sharper taste. During ripening, a mold culture is introduced into Dolce cheese, and the cheese has a yellowish, golden color. Gorgonzola cheese will add piquancy to desserts, sauces, salads and hot dishes.
